Equipment

  • Fish grilling basket or foil
  • Long-handled tongs
  • Instant-read thermometer
  • Basting brush
  • Grill scraper

Ingredients
  

  • 4 (6-oz) salmon fillets (skin-on or skinless)
  • 2 tbsp avocado oil
  • Kosher salt to taste
  • Black pepper to taste

Instructions
 

  • Preheat grill to 400°F (204°C) for 10 minutes.
  • Brush each salmon fillet with 1/2 tsp avocado oil to prevent sticking.
  • Place fillets skin-side down on the grill; cook for 4 minutes without moving.
  • Flip fillets carefully; grill for 2 minutes until the internal temperature reaches 125°F (52°C) for medium or 145°F (63°C) for USDA fully cooked.
  • Rest fillets for 3 minutes on a warm plate (pre-warmed in a 200°F oven, turned off).

Notes

  • Oil well to prevent sticking.
  • Use a wide spatula for flipping to keep fillets intact.
