- 115 g 90 % lean ground beef
- 150 g mixed vegetables (carrot julienne, spinach, mushrooms)
- 1 large egg
- 150 g riced cauliflower
- 1 garlic clove, minced
- 5 g fresh ginger, grated
- 15 ml low-sodium tamari
- 5 ml sesame oil
- 15 g gochujang paste
- 5 ml maple syrup or honey
- 1 green onion, sliced
- Sesame seeds
In a hot skillet, cook beef with half the garlic, ginger, and 1 tsp tamari → 4 min. Reserve.
Same skillet + sesame oil: sauté veggies with remaining garlic/ginger + 1 tsp tamari → 3 min. Reserve.
Add cauliflower rice. Cook 3 min. Spread in base of skillet.
Return beef and veggies in sections. Crack egg in center. Cook 2 min (sunny-side up).
Mix gochujang, maple, and 1 tsp water → drizzle.
Garnish with green onion and sesame seeds. Mix before eating.
