Ingredients
  

  • 1–1.5 pounds cod fillets (4 fillets, 4–6 oz each)
  • 4 tablespoons (56g) unsalted butter, softened
  • 2 tablespoons (30ml) olive oil
  • 4 cloves (1 tablespoon) fresh garlic, minced
  • 1 medium lemon (juice of half, ~1 tablespoon; other half sliced into 4–6 rounds
  • 2 tablespoons fresh parsley, finely chopped
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground

Instructions
 

  • Prepare the Garlic Butter Mixture
  • Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it.
  • In a small bowl, combine the softened butter, olive oil, minced garlic, paprika, salt, and black pepper.
  • Mix until it forms a smooth paste.
  • Add the chopped parsley and lemon juice, stirring to incorporate. Set aside while you prepare the fish.
  • Pat the cod fillets dry with paper towels
  • Slice half of your lemon into thin rounds (4–6 slices).
  • Arrange the lemon slices in a single layer in the baking dish.
  • Place the cod fillets on top of the lemon slices.
  • Spread the garlic butter mixture evenly over each fillet.
  • Place the baking dish in the preheated oven.
  • The cod is done when it flakes easily with a fork and reaches an internal temperature of 145°F."
  • Cut the remaining half lemon into wedges for serving.
  • Spoon any garlic butter sauce from the baking dish over the fish before serving.
