- 140 g canned tuna in water, drained
- 100 g canned white beans, rinsed
- 80 g cherry tomatoes, halved
- 30 g red onion, finely diced
- 30 g baby arugula
- 15 ml olive oil
- 15 ml fresh lemon juice + zest of ½ lemon
- 1 garlic clove, minced
- 5 g fresh basil, chopped
- Salt and pepper
In a cold skillet or bowl, flake tuna with a fork.
Add white beans, cherry tomatoes, and red onion.
In a small jar: shake olive oil, lemon juice, zest, garlic, salt, and pepper.
Pour dressing over tuna mix. Toss gently.
Fold in arugula and basil.
Let rest 2 min for flavors to meld. Serve cold or room temp.
