Ingredients
  

  • 140 g canned tuna in water, drained
  • 100 g canned white beans, rinsed
  • 80 g cherry tomatoes, halved
  • 30 g red onion, finely diced
  • 30 g baby arugula
  • 15 ml olive oil
  • 15 ml fresh lemon juice + zest of ½ lemon
  • 1 garlic clove, minced
  • 5 g fresh basil, chopped
  • Salt and pepper

Instructions
 

  • In a cold skillet or bowl, flake tuna with a fork.
  • Add white beans, cherry tomatoes, and red onion.
  • In a small jar: shake olive oil, lemon juice, zest, garlic, salt, and pepper.
  • Pour dressing over tuna mix. Toss gently.
  • Fold in arugula and basil.
  • Let rest 2 min for flavors to meld. Serve cold or room temp.
